La Cruz de Huanacaxtle Mexico Vacation

La Cruz de Huanacaxtle Mexico , the meaning La Cruz de Huanacaxtle means the “Cross of Huanacaxtle”.  I have heard from a long time US resident that the name was founded when lightening struck a Huanacaxtle tree, and created a cross on the tree. I have not seen this in writing anywhere as of yet, however, this is one story told around the town of La Cruz de Huanacaxtle Mexico.  There was also a cross make from a Huanacaxtle tree entering the town of La Cruz de Huanacaxtle.
Tradition, as there’s no better word to describe what is now La Cruz de Huanacaxtle Mexico.  A cross made from Huanacaxtle wood is located by the beautiful main town square in the middle of the roundabout, (the glorieta) on your way towards the main docking area at the La Cruz Marina on the Riviera Nayarit in amazing Mexico.  Click on the links and photos to lead to more fun information.

The Glorieta and the Underground Story
Now, another story emerges, and was told to Lisa Van Thillo and  Lori Wilson from La Cruz, who had the pleasure of interviewing La Cruz’ Delegado Angel Alberto Garcia de Haro recently.  This is a another very cool story, and to say that it is more confirmed than the last!  It’s about the history of the La Cruz Cross, located at the Round’ a ’bout in the center of La Cruz’s main avenida, and right next to the La Cruz Town Square. The roundabout is also known as the glorieta.  Here is her words…thanks to my amiga Lori Wilson!

“When Lisa and I (Lori Wilson)  asked Angel (La Cruz’ Delegado Angel Alberto Garcia de Haro ) if he had any interesting and/or humorous stories about life in La Cruz he told us a story about the glorieta.  About 300 years ago pirates built a dungeon in the area under the cross with a connecting tunnel that had an entrance at the old Enrique’s Restaurant. The dungeon had chains attached to the walls and to this day the remains of their prisoners can be found. Apparently only the old timers knew about this and many years ago when the streets were being built a group of young boys found the tunnel and entered. One boy, who went in farther than the others discovered the remains. Can you imagine his surprise? The boys ran home and told their parents who immediately blocked the entrance. The parents have since died, but the boys are still living in La Cruz.”

What a great story! And, I am sure that those boys told stories for a long time, probably even to this day to their children and possibly grand children. WOW!

La Cruz de Huanacaxtle Mexico and The La Cruz Marina History
This small nestled  pueblo of La Cruz de Huanacaxtle Mexico was founded in the early 1930′s by visionary individuals with the last name of Chavez, and the town of La Cruz has grown by leaps and bounds since then. Located off of the 200 road as you head towards Punta Mita, and situated off the Banderas Bay, (the largest man made bay in Mexico), this small town can be easily passed by, yet boasts of unique places such as the newly rebuilt La Cruz Marina, which has served the public for more than 5 years. The year 2008 saw a magnificent harbor renovation which now hosts colorful spots for boat lovers, and sailors that come in to doc for the winter months, making La Cruz de Huanacaxtle Mexico one of the perfect places to spend a magnificent Riviera Nayarit vacation in La Cruz de Huanacaxtle Mexico. 
For those people with a penchant for long-term sailing the town is particularly attractive. Much of this charm can be traced to the mixture of modern facilities and the traditional way of life. During the high season, the La Cruz Marina also offers the La Cruz Market every Sunday, starting  on the first Sunday in November and usually ending in mid May. Vendors from Puerto Vallarta to Lo de Marcos and some from as far as La Penita and Guayabitos come to sell their wares and fresh foods. jewelry and everything in-between! The market runs from 9-2pm.

Huichol Indian Art Gallery

Bucerias Community – The BBCC is for Everyone!

 

I love living in the Bucerias community on the Riviera Nayarit. The color of Mexico life makes all of my senses come to life. Bright colors abound together, ones I would not have considered wearing together in Colorado, but do now with much delight. The heart centered energy of the Mexican culture opens my heart also, their faith and love of family and life renews my spirit.

Living on the Riviera Nayarit and owning websites allows me to help non-profit organizations get their word out and about. They must be truly non-profit to get my attention. There are so many ways to help the Riviera Nayarit communities.

During the winter season, many expats come down for the 5 or 6 months to enjoy the warm weather. These people help out immensely with all kinds of non-profit events in many ways. However, its summertime now, and non-profit organizations like the BBCC need our help.  The BBCC summer program for the children has just begun. Its really fun for the kids, and all of the teachers and volunteers are absolutely NOT paid in any way. I will be teaching the kids how to swim! and help out with the birdwatching classes .with Luis Morales from the San Pancho Birding Observatory, another wonderful non-profit organization.

The Bucerias Community has a community center, called the BBCC, or Bucerias (Bilingual) Community Center.  The BBCC was founded in 2007, and offers a central hub for all residents and visitors to the area who wish to make new friends, learn different cultures and know more about their neighbors and their way of life. This Bucerias Community Center is an activity center dedicated to cultural appreciation for peoples of all ages and nationalities. The BBCC offers a summer program for disadvantaged kids so they can come and learn new hobbies and skills. The Children have fun learning and experiencing bird watching with Luis Morales who heads up the San Pancho Birding Observatory, clay sculpture, guitar lessons, swimming lessons, art and yoga and dance, as well as learning English. There will be story telling and fun and games. The children’s summer program fun started this week, so it’s not too late to get your children involved for the Bucerias community classes.  Call the BBCC at 322-102-0382, or stop by to Calle 16 De Septembre #40 Col La Unidad. In general, the Bucerias Community Center serves some 60% Expats and 40% locals.  Seasonally this changes but during October to April when the Bucerias Community Center classes and workshops and main fundraising events take place, we are supported by Canadians, North Americans, Mexicans and some European or other South American culture-seekers! Jaltemba Bay Animal Rescue In Mexico

If you have not yet heard of Lin Chimes (seen here below busy at work!) and the Non Profit Jaltemba Bay Animal Rescue program,  well..she is one amazing woman who pulls us and the Mexico dog and cat population together in the Jaltemba Bay area, (Las Varas, La Penita and Guayabitos) on the Riviera Nayarit in Mexico.
From coordinating and working the free spay and neuter clinics, fundraisers, adoptions and coordinating travel plans to get these animals connected with their new owners, Lin Chimes is one dear angel!
Lin has a lot caring folks on her animal rescue team, and we applaud all of you! Thank YOU!

He has completed over 150 film and video projects for Canadian and international clients, including governments, school boards, research foundations, television stations, and private-sector companies and has held long term
contract positions as a videographer and cinematographer with the CBC. He has freelanced for Australian Film commission, British Government, Saudi Arabia, Home and Garden TV, Discovery Channel, Fuji, Toshiba, Sony of
Japan, Volkswagen of Germany, Aboriginal Relations and Reconciliation Communications BC, BC Premier Glen Clarke and Steven Spielberg. Don also received an award as a videographer for Steven Spielberg’s
project, “Survivors of the Shoah,” recording the personal testimony of individuals who lived through the Nazi regime in Europe.

Thank to Joy and Lionel for rescuing another little abandoned dog from La Penita beach . They have rescued Pico two years ago from La Penita Centro . Actually , the dog adopted Joy. She followed her all the way to the RV Parkand would not leave . This little one , Miss Lucy , was covered with ticks , flees and matted all over . She had been abandoned by her owner and was fending for herself for a month . A special thank you to Joy for her volunteer days at the November Spay and Neuter Clinic .

Riviera Nayarit Vacation Attractions

Most folks that visit focus their Riviera Nayarit vacations in Mexico on ocean attractions and adventures, as the state of Nayarit has 289 kilometers (181 miles) of Pacific coastline. This coastline is known as the Riviera Nayarit. However, there is plenty to discover after the whale watching, snorkeling and deep sea fishing…and drinking and eating on the playa!

Inland life and environment drastically changes from the amazing pacific ocean to farm land and thick green jungles filled with history and wildlife.
The state of Nayarit covers an area of 27,620 square kilometers (10,664 square miles), which is a little larger than the US state of Maryland, with the capital being Tepic.  Folks that are on their Mexico vacation, on the Riviera Nayarit for a week or two, rarely find the opportunity to discover the inland attractions in the state of Nayarit.

The Archaeological Site of Los Toriles

Part of Ixtlán, and also one of the most studied archaeological zones in the state of Nayarit, Mexico, the Los Toriles Ruins located in the town of Ixlan del Rio are part of the Aztlán tradition that flourished in that region from 300 BC. Once inhabited by a Mesoamerican civilization who was thought to be predecessors of the Cora and the Huichol Indian tribes, this ancient city is the only comprehensive site of Mesoamerican ruins in the north region of Mexico.

Ixtlán del Rio was a thriving city consisting of more than 85 buildings. There are 15 structures that can be seen, one of the most popular which is a round shaped temple that historians believe was built for their god of wind, named Quetzalcoatl. The city’s tombs, Tiros de Tumba, or also known as shaft graves, are uniquely shaped where the dead were buried on the sides of deep holes.

Los Toriles ruins are located in southeast part of the state of Nayarit, in the town of Ixtlán del Rio, two kilometers inland off of Highway 15 between Tepic and Guadalajara. Guadalajara is about 3.5 hours from the Riviera Nayarit. This archaeological site includes a museum containing unearthed artifacts along with descriptive information.
The museum and the archaeological site is open daily from 9:00 a.m. to 5:00 p.m. Admission is $30 MXN to the general public, and free to the disabled, seniors, children, students and teachers, which is nice! On Sundays, entry is free for everyone!

Riviera Nayarit San Blas Sport-Fishing Tournament 2013

Riviera Nayarit is hosting this year’s International Sport-fishing Tournament of San Blas, located on the Riviera Nayarit  from record asistencia torneo de pesca san blasMay 29th to June 2nd, 2013 at the Tourist Marine place located in San Blas, Nayarit, Mexico.
San Blas is both a port and popular tourist destination, located about 160 km north of  Banderas Bay and Puerto Vallarta and 64 km west of the state capital Tepic. The town has a population of about  8,700 pe0ple, and was founded by local Indians in 1531.  However, the official date is 1768 for that event, when Don Manuel Riviera and 116 families were ordered to occupy the town on orders from the Viceroy of New Spain; and San Blas became a new naval base for the Spanish Navy.
San Blas is also known for its amazing estuaries and fresh water springs with a gateway to an extensive mangrove forest and federally protected nature preserve where hundreds of bird species like blue, yellow and pink footed boobies can be found and other jungle life.  Along with all of this history, wild life, flora and fauna – San Blas is known for its fishing, and delicious San Blas shrimp!

The San Blas 2013 Fishing Tournament will be very much like last year’s tournament.  The fees remain the same, but this year the prizes SanBlas: image 42 0f 60 thumbhave increased – making it more fun than ever to win!  This year the winner of each category wins a CAR!  In addition to a chance to win a car the $19,000 peso registration fee includes participation in the daily “Jackpot,” the Inauguration Ceremony, the official lunch on Friday, the closing Ceremony, and one ticket for the raffle – if you don’t win a car, maybe you can win a brand new outboard motor!  Its easy to register via Bank Deposit, wire transfer or cash on the same day of the event.

Tournament by Vessel
Each vessel can have up to 4 fishermen on board; the winner will be the one that catches the heaviest fish in each category record asistencia torneo de pesca san blasduring the three days of the competition.
Catches by Day (maximums per vessel):
- Three Sailfish – minimum weight 25 kg each
- Three Mahi Mahi – with minimum weight 10 kg each
- One Marlinminimum weight of 85 kg
* Note: every single fish officially weighed in, after a vessel’s return will become the property of the Sport-fishing Club of Tepic, even if it doesn’t meet the get the minimum weight. Sup’ing, Massaging, n’Partying on the Riviera Nayarit

Hey gang, just had a pretty cool week out and about down here on the Riviera Nayarit  in Mexico with my kool brother-in-law, and I can’t wait to tell you about it! With Eric just getting into town, our week of fun started on Thursday…and what a long and fun Riviera Nayarit community weekend it was!

Living life on the Riviera Nayarit is simply beautiful with many Riviera Nayarit attractions; as it is no surprise why more and more folks come here for a vacation or to relocate, like I did over two years ago.

We started out our days hanging out in the villa, chillin’ out, and enjoying the sunrise over the Banderas Bay, cupp-a-joe in our hands, and giving thanks and that we can be and live in such an amazing place called the Riviera Nayarit.


An Equinox Blessing at Los Arroyos Verdes Retreat

It all started on Thursday with a lovely blessing for the lunar equinox at Los Arroyos Verdes Eco Retreat in Bucerias.

We were there to join together in a celebration of a lunar equinox – asking a blessing and thanking mother earth and all the powers and elements for their healing presence in our lives, and releasing all of the old ideas and energies that can prevent one from moving  forward in life.  Marielana Capdevila, who was born in Mexico City, led us in a spiritual walk, an acceptance with gratitude for all that we are given, and the weaknesses we all have – a walk that culminated in shedding our chrysalis of old, un-useful thoughts and habits – a spiritual and intellectual spring cleaning. Marielena also is an amazing artist, and specializes in portraits and personal mandalas.

We ate at the restaurant enjoying delicious limonada con agua mineral – a delight – while Julio, our waiter at Los Arroyos Verdes, prepared chicken nachos and shrimp salads.  Oh, my goodness!  Another bite never to be forgotten in this life time!  Julio is amazing, Los Arroyos Verdes is amazing.  Dine, live in peace, or a short drive from Puerto Vallarta, visit Arroyos Verdes in  Bucerias this summer for a romantic weekend get-away in one of their comfortable Bucerias rentals, or for a relaxing day by the gorgeous pool.  Plan your wedding or special occasion with them. Sayulita SUPing
Friday, I took my visiting brother over to the SUP Club on the north end of the beach in Sayulita for his first SUPing adventure. Here is a note from my brother-in-law about his experience!
“A great bunch of guys led by Antonio, who is a SUP instructor extraordinaire!  In just a few minutes of really excellent instruction, Antonio had explained the SUPing fundamentals, and we were wading out for my first ever, really, no kidding, I am NOT putting you on, SUP effort.  How I’ve missed out on the SUP phenomena is beyond me – I’ve spent the last 35 years sailing on and living along the coasts of the world.  But here I am living large on the Riviera Nayarit, and Antonio of the SUP Club Sayulita has – no kidding, in about 2 minutes of on water instruction – got me up and SUPing….and I MEAN SUPing!  None of this paddling around on a mill pond crap, I am up really SUPing, I am bending my knees and digging in.  Very cool sensation by the way, and a very neat way to get about on mother ocean.  If you love her like I do, you will love SUPing ans SUPing in Sayulita, Riviera Nayarit, with the SUP Club Sayulita is absolutely the way to go.  Very impressive!   You want to SUP, to see Antonio at SUP Club Sayulita.  Now, don’t put to the test, I was no means keeping up with the aces that zip around in the surf zone in Sayulita, Riviera Nayarit sporting their thongs and fancy moves – but I paddled out to the anchored sailboat in a reasonable amount of time — and I only fell off about 20 times — but you know what I had a blast – and for a guy like me that icing on the cake!”
SUP camps are abundant in Sayulita. SUPing is really for everyone, and Sayulita is the perfect place to learn! . Especially now that the currents have shifted…and Sayulita is often known as “Lake Sayulita” in the summer months!

Sayulita Mercado
Friday was also the  last day for the Sayulita Mercado, or the Sayulita Farmer’s Market.  We went over to get in some last of the season purchases.  It’s refreshing to see organic products, crafts, produce, local wares and organically prepared food, much of it hand made by locals, of all races and nationalities coming together in such a wonderful community event.  Live music was fun while we shopped and ate. Adios until next season mi compadres!  For everyone who is staying for the spring and summer, about ten or so of the vendors from the Sayulita  Mercado are moving their gig to “Tacos on the Street” (owned by Sandrita) every Saturday morning – at least until they get a feel for affordability. They are located on Revolution on the right corner just before the bridge as you come into town.

Sayulita Massage on the Playa
I wanted to treat my brother-in-law for an experience with a massage with David Chavas, who does the Benzonite clay massage on the playa in Sayulita, located just north of Costenos Surf shop. I can say from my own experience that David and his clay work magic…especially on my face wrinkles…almost better than a facial!
David is a nice looking guy, but he wears his clay all over his face and body to protect him from the sun all day. Some folks are a bit put off by that at first. But, once you get on the table all of that fades away.  Here is what my borther-in-law said about his massage experience.

“Well, at 56 you just can’t jump up and “git’er’dun” like you used to, at least I can’t!  How does the old song go…”I’m as good as I once was, once…” so off I went to get a massage.  SONRISA GRANDE!!  I was very fortunate that my sister turned me on to David Chavez of Therapeutic Massage with Benzonite Clay (or “Con arcilla o barro” if you prefer).  MARVELOUS!! Oh, the aches and pains that I no longer have are legion.  He worked on me, smearing us both liberally with the arcilla o barro for 90 minutes – he found aches I didn’t even know I had, YET!  Cripes…he has the strongest fingers I’ve encountered on 7 continents!  An ex-boxer, David Chaves understands muscles, recovery, stimulus, nerve endings….and after years and years of study, both formal and informal he possesses encyclopedic knowledge of anatomy and various forms of massage – Thai, Swedish, Deep Tissue, the list is long, and exhaustive.  Extraordinary strength, knowledge, talent and a passion for healing is a rare, beautiful thing – visit a David Chavez of Therapeutic Massage in Sayulita, Riviera Nayarit – do something for yourself today! …and you have an masseuse of rare skill and ability…a rare mixture indeed.
A brisk swim in the beautifully warm water off Sayulita, Riviera Nayarit and a shower back at David’s washed off the clay, and I was a new man.

When your Hungry Try Km 5 Surf Bar!
Km5 Surf Bar and Restaurant, located along the back way out of Sayulita, en-route to Punta de Mita Road.  A late lunch, and a head start.  A head start to get a meal and a good seat, because on Friday nights Km5 Surf Bar and Restaurant has live music and there is no place else to get a groove on like the intimate dance floor at Km5 Surf Bar and Restaurant.  The band I was delighted to see perform played a pleasing mix of some original riffs, cooler than cool oldies, and some current themes – carrying them pretty ably – with some really cool vibes coming off the bass.  Buon hecho compadres!  Food is really center stage! The food is all freshly made on site by Chef Rodo using all fresh produce, fish and meat and organic lettuce and produce.  I was honored to meet Chef Rodo during my visit to Km5 Surf Bar and Restaurant – we chatted while he made, from scratch, his special pizza dough.  Chef Rodo, and his trained staff, create every plate and pizza from scratch that comes out of the kitchen at Km5 Surf Bar and Restaurant and he gets it!  He proudly puts his name behind everything that comes out of the Km5 Surf Bar kitchen.
Try the Portobello and asparagus burger with cheese – I nearly died – what a delicious sandwich!  The asparagus was simply perfect….grills marks, a tang – not a singe, if you know what I mean…the Portobello was another technical triumph, just on the dry side of wet, the juices were still there but not dominant…Ha!Listen to me, can you tell I enjoyed that sandwich.
Km5 Surf Bar and Restaurant is a special place, totally original painting – the galley is made to be the inside of an old VW combi van – the ground floor is six inches deep in sand – the action is upstairs where the breeze blows, and the sun glows.   It is the only authentic Surf Bar on the Riviera Nayarit that I know of with the “surf shack” building and the sand floors downstairs, and amazing views of the ocean and jungle. Surfboard rentals are available as well.  Check them out, you’ll be glad you did.

The Perfect Ending for a Lovely Weekend!
We ended the our Sunday the way all days were meant to be spent – with family and friends.  We made a little camp down on Destilidaras Beach, and had fun swimming and chillin’ before heading up to dinner at the house.   It was a day filled with blessings of the amazing Riviera Nayarit!
Our bones loosened up in the warm sun as we walked and swam, then we ate and drank. The Riviera Nayarit beaches are why most folks are here.. ..where the jungle meets the Pacific ocean.

We left there and came home to our villa overlooking Banderas Bay -  Having taken in the view with appropriate vigor, given a nod for another perfect sunset – all accompanied by an adequate, but so far, not overwhelming, amount of eating and drinking, we repaired to the living room/swimming pool area and began to eat and drink in earnest.
Eating and drinking is a very, very important pastime here on the Riviera Nayarit – and we spent an awful lot of time eating and drinking!
And so this wonderful weekend ended as it began, looking out over Banderas Bay, surrounded by my friends and family of drifters, misfits, and retired bums – all of us adrift on the never ending adventure that is life here on the Riviera Nayarit in Mexico!

 

 

La Cruz Hosts 3rd Augas Abiertas Riviera Nayarit

Located on the Riviera Nayarit La Cruz de Huanacaxtle, Mexico expects 500 swimmers in all categories to participate in the third Aguas Abierta Riviera Nayarit, which is scheduled to take place on April 27, 2013 at the Marina Riviera Nayarit in La Cruz de Huanacaxtle.  La Cruz is located between Bucerias and Punta de Mita, west of the 200 Road.

Young swimmers of all ages will be testing their endurance in this competition, with levels starting at:  7 to 10 year old children swimming 500 meters,  kids 11 and 12 swimming 1.250 km.; swimmers ages 13 and 14 competing in the 2.5 km swim, and amateurs 15 years and older swimming the 3.75 km in the required time of under 2 hours.  If the first two Aguas Abiertas are any guide – it’s going to be great fun for everyone!

The main competition will be a 5km race for professional swimmers with a time limit of 1 hour, 20 min.  Last year Alan Rojas Sagrero won in a time of 1:01:33 and Lizeth Rueda Santos in Aguas Abiertas Riviera Nayarit 2011 time of 103:26, both swimmers bettering the 2011 times!  This year should be an exciting competition. Riviera Nayarit Local Fruit & Herbs Makes Great Thailand Recipes

My husband and I are very fortunate to live in beautiful Puerto Vallarta, which is on the border Nuevo Vallarta and the Riviera Nayarit in Thai Food Tom Yum Goong Stock Photo - 11010004Mexico, for the past a 11 years. I love all the different foods you can get here in Mexico, as the combinations create amazing tastes and textures.
However, one of my favorite cuisines, Thai, is not very available.

I know that in the past there have been several restaurants that have tried to serve Thai food but quickly went out of business, much to our chagrin.

Thailand New Year in April

The celebration in Thailand usually last for several days, with official public holidays lasting through Wednesday, 17 April 2013. It is their water festival, where people splash each other with a bucket of water in the streets of Bangkok, Phuket, Pattaya, Chiang Mai, and other Thailand cities. If you happen to be there, or in any major city along the west coast of the United States, don’t wear your finest or you will get it water spotted. What is less known is that the Thai New Year is also a very religious festival, where Thai people go to Buddhist temples and gently bath Buddha statues by pouring water on the statues, and give alms to Buddhist monks.

Until 1939, the country we now call Thailand was known as Siam. You remember the movie “The King and I” with Yul Brenner don’t you?, and it was the only Southeast Asian country never colonized by the West.

Thai food is known for its unique combinations of seasoning. Although it is hot and spicy, Thai cooking is carefully balanced to bring outVariety of spices in small black bowls. Curries (dishes made with a spicy powder called curry) are a mainstay of Thai cooking. Hot chilies appear in many Thai dishes. Other common flavorings are fish sauce, dried shrimp paste, lemon grass, and the spices coriander, basil,
garlic, ginger, cumin, cardamom, and cinnamon. Soup, eaten with most meals, helps balance the hot flavors of many Thai dishes as do steamed rice, mild noodle dishes, and sweet desserts.

Thai Foods  Found on the Riviera Nayarit
Coconuts play an important role in the Thai diet, as here on the Riviera Nayarit. Many Riviera Nayarit locals consume green coconut juiceGreen Coconut 2 in their diets to clear bacteria and promote good health.  Ask for a Coco Frio. Coconut milk and shredded coconut are used in many Thai dishes, especially desserts. Shrimp is also a main part of Thai food, as here on the Riviera Nayarit. San Blas is known for its delicious shrimp.

Thai people eat a variety of tropical fruits for dessert that are found also on the Riviera Nayarit, including mangoes, papayas, custard apples with scaly green skins, and jaca fruit, or known also as  jackfruit, which is a light lime green, very large and prickly, and has yellow flesh.  It is actually the largest fruit, and all parts of the jaca fruit can be used. You may even use  the seeds, cooked and mashed, much like mashed potatoes!
Spicy Thai dishes are often balanced with the tart flavors of such ingredients as lemon grass, ginger, lemons, and limes.
These fruits and herbs are readily available on the Riviera Nayarit and throughout Mexico.

Here is a fun and tasty Thai recipe to try at home created with coconut milk in it.
You may also substitute the beef for chicken. Below is also a wonderful recipe for a cool Cucumber salad. Cucumbers are part of the daily diet here in Mexico.  Enjoy.

Thai Beef Curry
10 ounces beef flank steak with the fat trimmed off
2 cups coconut milk, unsweetened
2 Tablespoons red curry paste
1 teaspoon fish sauce
1 cup bamboo shoot strips
1 teaspoon sugar
3 Tablespoons water
20 leaves of fresh basil
¼ medium red pepper, cut into thin strips
2 Tablespoons green peas, frozen
2½ cups rice, steamed

Slice the steak into pieces ¼-inch thick, 2 inches long, and about 1-inch wide. Heat 1 cup of the coconut milk in a wok or frying pan and add the red curry paste.

Stir to dissolve and cook at high heat for 5 to 6 minutes, until the oil of the coconut milk rises to the top and the sauce thickens. Add fish sauce and stir. Add the second cup of coconut milk and the beef. Reduce heat to medium.

Add the bamboo shoot strips and the sugar. Return the heat to high and add 3 Tablespoons water, cook, stirring for 3 minutes until bubbling. Add ¾ of the basil leaves, the red pepper strips and the green peas.
Stir and cook for another 30 seconds, folding all the ingredients into the sauce. Remove from heat and
transfer to a serving dish.

Top with the rest of the basil leaves and the additional red pepper strips. Serve immediately, with
steamed rice. Serves 8.

Cucumber Salad
1 long cucumber
½ small red onion
⅓ medium red pepper
1 Tablespoon sugar
Vinegar
½ teaspoon salt
Fresh coriander leaves
(Peanuts optional)

Washhttp://www.atasteofthai.com/images/thai/recipes/recipe345-400w.jpg and dry the cucumber, and peel it if desired. Cut in half lengthwise and then into quarters. . Slice
the quarters into ¼-inch pieces and arrange on a plate.

Slice the red pepper and onion into thin strips. Scatter them over the cucumber. In a small bowl
combine sugar, vinegar, and salt. Pour dressing over the vegetables and top with the coriander leaves.
Serves 4 to 6.
